Nettle Soup

Recipe for Springtime in a bowl

Nettle Soup with optional lardons, wild garlic & raw cream.

Kick start a sluggish liver, provide your body with easily absorbable nutrition , and connect with the seasons by making this delicious soup.

Firstly - pick the nettles. Choose a place thats away from a road. Pick the young looking, bright green nettles.


1/2 carrier bag nettles - sorted and rinsed.

1 potato, cubed.

1 carrot, finely chopped

2l homemade chicken or veg stock

1 onion, finely chopped

3 garlic cloves, finely chopped

butter for frying.


Fry the onions and garlic in butter until softened 

Add the carrot and potato and the nettles. Add the stock and bring to a simmer for 15 mins.

 Using a hand blender, blend the soup. Add a dash of creme fraiche or chilli oil if desired.
